
Istry Sorrel
Istry Sorrel — it all started here.
Sorrel is a deified beverage on our small island. So much so that it has been imprisoned in a one-note existence: sweet, strong, ginger. Any other way — apparently — is sacrilegious.
But almost like at the Tower of Babel, I had to know why.
So I asked around. How others made their sorrel. (Shout-out to Z.) And not surprisingly, I found that there were different ways to do it. And so I decided: we can do it differently — and we will. We will free the people from the shackles of "because that's the way it is." There must be another way. There is always another way.
So we added orange peels, cloves, pimento, coconut oil fat-washed Wray & Nephew — and it was like a brand new world opened up.
There is no one way to skin an orange. 2 + 2 = 4, but so does 1 + 3, 0 + 4, 6 − 2.
That turned into making sorrel into a syrup and asking friends to come try my ideas on a whim — and then a chef dude shows up with tasty bao buns, and the rest is?
The Concept
This was the concept behind Istry. The curiosity that kept bringing the cat back. The bright sparks that you can't look away from.
The essence of life, being alive, feeling alive — the childlike experience of discovery. Seeing something for the first time, feeling something for the first time — drinking or eating something for the first time and living again. Seeing the world through my eyes, just through a drink.
This is my canvas, my Clair de Lune.
They say smell is the sense most associated with long-term memories — but you can't tell me taste isn't a strong contender. It's why cultures revolve around it: recipes, community gatherings, secrets, heritage. It's all about what we share in our cups and on our plates.
The Heart
It's because the best things come from the heart.
And if there's one thing the founders of this company share, it's that there's a lot to give from ours. We will never stop. We will never apologize for it.
